Sure, tequila shots are fun at parties (and maybe gives you some liquid courage before stepping onto that karaoke stage), but artists rapping about “shots of Patrón” have really given tequila an undeservedly bad (and, ahem, cheap) rep. A nice touch: the hand-blown glass bottle, which is topped with a hand-painted agave piña and vintage-inspired label. Becoming part of the Constellation portfolio has helped open distribution pipelines and allowed us to experiment more with cask finishes and innovations. The fermentation length, temperature and yeast affect the development of flavor compounds or congeners that produce a specific tequila style. Some producers add piña fibers called bagasse to the fermentation vessel to enhance the complexity of the spirit. Regulations demand that tequila be double-distilled in pot stills, or produced with a continuous still that has at least two columns.

JM: Agave spirits are being produced throughout South America. Blue agave is being grown in Australia, South Africa, and the southwest United States. What kind of a challenge will these other sources of agave spirits pose to the Tequila industry in Mexico? The secret to Cenote’s smoothness? The company says it sources naturally filtered water from an “artesian well” located at their distillery, which sits at the base of the Jalisco volcano. Cenote says the water goes through a reverse osmosis process and carbon filters with silver ions help to eliminate any chance of impurities affecting the taste.Like wine and other unique spirits, tequila is produced according to regulations that govern its appellation of origin. Tequila may only be made in the state of Jalisco, which includes the town of Tequila, and parts of the surrounding states of Guanajuato, Michoacán, Nayarit and Tamaulipas. It must be made from blue agave and in accordance with additional rules for ingredients and aging. Spirits made using other agave species or elsewhere in Mexico are classified as mezcal. All the following tequilas are crafted from 100% Blue Weber agave (which matured for almost twice as long as the usual industry standard of seven years before harvesting), boast a 40% ABV and, unusual for a tequila, they’re triple distilled. How They Taste Jose would go on to earn a degree in economics from the University of Dallas, and in 1997 he founded the Casa Noble tequila brand. The original concept for the brand was to take something as quintessential as Mexican tequila and create an upscale, quality brand that could counteract the negative perception of the spirit that was common in the late 1990s. He partnered with Carlos Hernandez, who owned an estate in Mexico, and together they started growing, harvesting, and distilling their own spirits.

I think this bottles does a good job of balancing the need for branding and marketing while still having a clean look that showcases the spirit. Casa Noble was one of the first tequila producers to be USDA certified organic. It was the first brand to achieve both crop and process certification. The current fields were untouched before planting the agave more than 20 years ago, which means there has never been any use of fertilizer or chemicals, or risk of cross-contamination. Its American Brand Family Runs DeepAnother thing to look for aside: a four-digit number that represents each distillery’s unique code. The Norma Oficial Mexicana number (or “NOM”) is assigned by the Mexican government and certifies that the bottle you’re holding is authentic tequila produced in Mexico. It also tells you which tequila producer it comes from. Tequila Patrón, for example, has a NOM of 1492. Much like the old version of the tequila, this reposado spends 364 days in French white oak, putting it on the cusp of anejoness. Like the previous expression, this tequila pulls no punches when it comes to expressing its agave core. Sharp and peppery on the nose, but undercut by peach and orange fruit notes, the tequila develops slowly to offer a milk chocolate character that layers in more hints of sweetness. The palate is quite spicy — toasted almonds layered with cinnamon and allspice — with greener, pepper-heavy notes building on the tongue. The body moves from there into a butterscotch character, more vanilla and milk chocolate emerging toward the expressive finish. The conclusion offers a healthy balance of herbaceous and sweet — satisfying and balanced at once. Producers continued making mezcal with Mexico’s many agave species, but it became clear that one particular plant delivered the best spirits. In 1902, Alsace-born botanist Frédéric Albert Constantin Weber classified this species as Agave tequilana Weber azul, or Weber blue agave. Tequila may be bottled without maturation or aged in oak barrels. The length of aging determines how it is labeled: Colorless blanco or silver tequila is aged fewer than two months in oak; reposado between two and 12 months; añejo for more than one year. Extra añejo is a category added in 2006 that includes tequila aged at least three years in oak vats under 600 liters. Generally, the longer tequila ages in oak, the smoother and more full-bodied it becomes.

You still get the herbal agave in the spirit coming through, and the citrus flavors we’ve been seeing work well with the Cointreau and lime juice. I think it still might be a touch bitter for some, but I found the overall result a refreshing change from the usual overly-sweet margaritas we tend to see.
