About this deal

Our experience shows the process of multiple distillations of separate herbs and spices gives us more control over the finished Absinthe. In 1905 Swiss farmer, Jean Lanfray, murdered his wife and daughters sparking a national campaign to obtain a ban on absinthe.

Traditionally distilled in copper stills, the flavour of La Fee is entered around grand wormwood (Artesimia Absinthium) and balanced with petit wormwood, green and star anis. This involves mascerating the botanicals in the base spirit which imparts a natural green colour to the finished product and is identical to the techniques used in the 1800's.

The long connection between the Royal Navy and rum can be traced back to 1655 and Vice-Admiral William Penn's expedition to the West Indies. Before diluting it is clear, showing a striking green colour and has an attractive fresh anise aroma. The emerald green colour is all part of the absinthe experience, too, and La Fée Parisiennie Absinthe’s bottle has been covered with a UV-resistant coating to preserve the green colour of the liquid inside, which can be affected by sunlight. A mere fraction of a change in one ingredient, caused by a natural variation, can upset the final balance of the spirit.

La Fee Parisienne is an absinthe packed with the flavours of traditional Grand Wormwood, Green Anise, Star Anise, Hyssop and Fennel, giving a fresh herbal aroma. The palate is fresh and rounded with anise with angelica, coriander, fennel, mint and liquorice all present in the background. Traditional French absinthe has always been enjoyed by slowly adding 4-6 parts iced water through sugar placed on an absinthe spoon. There is one last stage before we are ready to bottle La Fée: A sample is couriered to Marie-Claude Delahaye (in Paris) and also to George Rowley, who test each batch, using their extensive experience of tasting Absinthe and also their knowledge of the original master recipe. Not as bitter as its Grand cousin, pontica is utilised for its herbal aroma rather than adding any discernible flavour.This starts with colour (soft green with a hint of yellow), then adding water to establish the depth of louche. The nose neat is a powerful smooth spirit with a noticeable herbal Artemisia profile with soft tones of anis, fennel and spicy coriander showing… … after dilution the louche effect has turned the absinthe supérieure to a milky, opalescent green/yellow and opens up the aroma and taste, as the essential oils trapped in the distillations are released, filling the air and your senses. Added Protection: To protect the all-natural Parisienne we have commissioned and coated our signature bottle with a special UV inhibitor to protect the liquid against sunlight, which can quickly damage natural green.
